1/2 tsp baking powder

1/2 cup breadcrumbs (or chickpea flour for gluten-free option)

4 medium sweet potatoes

Olive oil, for drizzling

Salt and pepper, to taste

For the Tahini Sauce:

1/4 cup tahini

2 tbsp lemon juice

1 clove garlic, minced

Water, as needed for desired consistency

Fresh cucumber, diced

Chopped tomatoes

Sliced red onion

Crumbled feta cheese
