Ingredients

1 pound fresh green beans, trimmed and rinsed

1 cup all-purpose flour

2 large eggs, beaten until frothy

1 cup panko breadcrumbs

4 cloves garlic, minced

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/2 teaspoon ground black pepper

1/4 teaspoon red pepper flakes (optional for heat)

Olive oil spray or a cooking oil of your choice for frying

Fresh parsley, finely chopped (for garnish)

Lemon wedges (for serving)

Instructions

Preheat your oven to 425°F (220°C). Prepare a baking sheet by lining it with parchment paper to prevent sticking and facilitate cleanup.

Thoroughly rinse the green beans under cold running water and then pat them dry with paper towels. Ensuring they are completely dry is key to achieving maximum crispiness when baked.

In a shallow dish, whisk together the flour, salt, black pepper, garlic powder, onion powder, and smoked paprika until well combined. Set aside.

In a separate bowl, beat the eggs vigorously until frothy, which will help the coating adhere better to the green beans.

In another shallow dish, combine the panko breadcrumbs, minced garlic, red pepper flakes (if using), and a pinch of salt, mixing well to distribute the flavors.

Working one at a time, dip each green bean into the flour mixture, coating it completely. Be sure to shake off any excess flour to avoid clumping.

Next, dip the floured green bean into the beaten eggs, allowing any excess egg to drip back into the bowl.

Finally, coat the green bean with the panko breadcrumb mixture, pressing down gently to ensure the crumbs adhere well. Repeat this process for all green beans.

Place the coated green beans in a single layer on the prepared baking sheet. Lightly spray the tops with olive oil to encourage a crisp texture during baking.

Bake in the preheated oven for 15-20 minutes, flipping the green beans halfway through the cooking time. They should be golden brown and crispy when done.

Remove the baking sheet from the oven and allow the green bean fries to cool for a couple of minutes. Just before serving, sprinkle with chopped parsley for a burst of color and garnish. Serve with lemon wedges on the side, allowing diners to squeeze fresh lemon juice over the fries for an extra zesty kick.
