Ingredients

4 large russet potatoes

1/4 cup olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon salt

1/2 teaspoon black pepper

1 cup shredded sharp cheddar cheese

1/2 cup crumbled crispy bacon (optional)

3 green onions, sliced (for garnish)

Sour cream (for serving)

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C) to prepare for baking the potatoes.

Prepare the Potatoes: Thoroughly scrub the russet potatoes under running water to remove any dirt. Once clean, use a paper towel to pat them dry.

Bake the Potatoes: Using a fork, poke numerous holes into each potato to allow steam to escape during baking. Arrange the potatoes directly on the oven rack and bake for approximately 45-60 minutes, or until they are tender. You can test their doneness by inserting a fork; it should glide in effortlessly.

Cool and Cut: After baking, carefully remove the potatoes from the oven and let them cool for about 10 minutes. Once they are cool enough to handle, slice each potato in half lengthwise. Gently scoop out most of the flesh, leaving about 1/4 inch of potato in the skin to maintain structure. (You can save the scooped-out potato for delicious mashed potatoes or another recipe.)

Season the Potato Skins: In a large mixing bowl, combine the olive oil, garlic powder, onion powder, smoked paprika, salt, and black pepper. Stir well to create a flavorful mixture. Brush this mixture generously over the insides of each potato skin, ensuring they are well coated.

Crisp Them Up: Place the potato skins, cut-side down, on a baking sheet lined with parchment paper for easy cleanup. Return to the oven and bake for 10-15 minutes, or until the edges are golden and crispy.

Add Cheese and Bacon: Once the potato skins are crisp, carefully flip them over. Sprinkle a generous amount of shredded cheddar cheese and crumbled bacon (if using) into each skin. Continue baking for an additional 5-10 minutes, or until the cheese is fully melted and bubbling.

Garnish and Serve: After baking, remove the potato skins from the oven and let them cool for a couple of minutes. Top each with freshly sliced green onions. Serve warm with a side of sour cream for dipping, and enjoy every crispy, cheesy bite!
