Ingredients

1 medium head of cauliflower, cut into bite-sized florets

1 cup sharp cheddar cheese, shredded

1 cup panko breadcrumbs

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (adjust based on your spice preference)

Salt and black pepper, to taste

¼ cup fresh parsley, chopped (for garnish)

Optional: sliced jalapeños for an added spicy touch

Instructions

Preheat the Oven: Start by preheating your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup and to prevent sticking.

Prepare the Breading Station: Set up your breading station by whisking the eggs together in a medium bowl until well combined. In a separate bowl, mix together the panko breadcrumbs, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and black pepper for a flavorful coating.

Coat the Cauliflower: Take a cauliflower floret and dip it into the egg mixture, allowing any excess egg to drip off. Next, roll the floret in the breadcrumb mixture, ensuring it is thoroughly coated for maximum crunch.

Arrange on Baking Sheet: Lay the coated cauliflower florets in a single layer on the prepared baking sheet. Ensure they are spaced out to promote even cooking and crispiness.

Sprinkle with Cheese: Once all the florets are arranged, generously sprinkle the shredded sharp cheddar cheese over the top of each floret, allowing the cheese to melt beautifully during baking.

Bake: Place the baking sheet in the preheated oven and bake for approximately 25-30 minutes. The cauliflower should be tender, and the panko breadcrumbs should turn golden brown and crispy.

Garnish and Serve: Once baked, carefully remove the tray from the oven. Allow the bites to cool for a few minutes. Just before serving, garnish with freshly chopped parsley for a burst of color and flavor, and add sliced jalapeños if you’re aiming for some extra heat.

Enjoy: Serve these cheesy bites warm as a delightful appetizer or snack! They pair wonderfully with a side of salsa or guacamole for dipping.
