Ingredients

4 cod fillets (approximately 6 oz each)

1 cup panko breadcrumbs

1/2 cup finely grated Parmesan cheese

2 tablespoons fresh parsley, finely chopped

1 tablespoon fresh dill, finely chopped

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and freshly ground black pepper, to taste

2 large eggs

1 tablespoon Dijon mustard

1 tablespoon olive oil

Lemon wedges (for serving)

For the Herb Sauce:

1/2 cup thick Greek yogurt

1 tablespoon mayonnaise

1 tablespoon freshly squeezed lemon juice

1 tablespoon fresh parsley, finely chopped

1 teaspoon fresh dill, finely chopped

Salt and freshly ground black pepper, to taste

Instructions

Preheat the Oven: Start by preheating your oven to 425°F (220°C). For effortless cleanup, line a baking sheet with parchment paper.

Prepare the Coating: In a medium mixing bowl, combine the panko breadcrumbs, grated Parmesan cheese, chopped parsley, chopped dill, garlic powder, onion powder, salt, and pepper. Stir the mixture until all dry ingredients are evenly distributed.

Make the Egg Mixture: In a separate bowl, whisk together the eggs and Dijon mustard until they are smooth and well incorporated. This mixture will act as a binder to help the panko adhere to the cod fillets.

Coat the Cod: Use paper towels to pat the cod fillets dry. This step ensures a crispier coating. Dip each fillet into the egg mixture, ensuring it is completely coated, then press it firmly into the panko mixture. Make sure both sides are generously coated with the breadcrumb mixture.

Bake the Cod: Arrange the coated cod fillets on the lined baking sheet. Drizzle the fillets lightly with olive oil to enhance browning. Bake in the preheated oven for about 12 to 15 minutes, or until the fish is cooked through, flakes easily with a fork, and the crust is a beautiful golden brown.

Prepare the Herb Sauce: While the cod is baking, take a small mixing bowl and combine the Greek yogurt, mayonnaise, lemon juice, chopped parsley, chopped dill, salt, and pepper. Stir until all ingredients are well mixed and the sauce is creamy. Set it aside for the flavors to meld.

Serve: Once the cod is baked to perfection, serve the crispy panko-crusted fillets hot from the oven. Pair them with a generous dollop of the herb sauce on the side and lemon wedges for an extra zing when squeezed over the fish.
