1 cup shredded cheddar cheese

1 jalapeño, sliced (optional for heat)

1 cup cooked black beans, drained and rinsed

1 cup corn kernels (can use fresh, frozen, or canned)

1 avocado, diced

½ cup diced tomatoes

¼ cup sliced green onions

Fresh cilantro, for garnish

Sour cream or Greek yogurt, for serving

Prepare the Potatoes: Begin by preheating your oven to 425°F (220°C). Thoroughly rinse the thinly sliced potatoes under cold water to eliminate excess starch, which will help them become crispier. After rinsing, pat them dry with a clean kitchen towel to remove moisture.

    Season & Bake: In a large mixing bowl, combine the dry potato slices with olive oil, garlic powder, smoked paprika, salt, and pepper. Toss the mixture until all the potato slices are evenly coated with the seasonings. Spread the seasoned potato slices in a single layer on a baking sheet lined with parchment paper. Bake in the preheated oven for about 25-30 minutes, flipping the slices halfway through, until they are golden brown and crispy.
