1 tablespoon cornstarch

2 tablespoons olive oil, divided

1 teaspoon smoked paprika

1 teaspoon ground cumin

1/2 teaspoon chili powder

Salt and freshly ground black pepper, to taste

1 bell pepper (color of your choice: red, yellow, or green), sliced into thin strips

1 medium onion, sliced into thin rings

2 cloves garlic, minced

1 tablespoon fresh lime juice

4 large whole wheat tortillas or wraps

1 ripe avocado, sliced

Fresh cilantro leaves, for garnish

Salsa or hot sauce, for serving

Prepare the Tofu: Begin by cutting the pressed tofu into bite-sized cubes. In a large mixing bowl, add the tofu cubes along with the cornstarch, 1 tablespoon of olive oil, smoked paprika, ground cumin, chili powder, salt, and pepper. Gently toss until the tofu cubes are evenly coated with the seasoning mixture.

    Crisp the Tofu: Preheat a non-stick skillet over medium-high heat. Once hot, arrange the coated tofu cubes in a single layer within the skillet. Cook for approximately 5-7 minutes, carefully turning the cubes occasionally, until they achieve a golden brown and crispy exterior. Once done, remove them from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add a splash more olive oil if needed to prevent sticking. Add the sliced onions and bell peppers to the skillet. Sauté for about 5 minutes, stirring occasionally, until the vegetables soften and begin to develop a slight char.
