Ingredients

1 lb cooked turkey breast, shredded or chopped

4 cups turkey or chicken broth

2 medium carrots, diced

2 ribs celery, diced

1 medium onion, chopped

2 cloves garlic, minced

1 medium sweet potato, peeled and diced

1 cup butternut squash, peeled and diced

1 cup green beans, trimmed and cut into 1-inch pieces

1 cup corn kernels (fresh, frozen, or canned)

1 tsp dried thyme

1 tsp dried sage

1/2 tsp black pepper

1 tsp salt (adjust to taste)

3 bay leaves

1 tablespoon olive oil

1 tablespoon apple cider vinegar

Fresh parsley, chopped (for garnish)

Instructions

Prep the Ingredients: Wash and peel all the vegetables as necessary. Dice the carrots, celery, onion, sweet potato, and butternut squash into uniform pieces for even cooking. Trim the green beans and cut them into 1-inch segments.

Sauté Aromatics (Optional): In a skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic to the skillet. Sauté for about 3-4 minutes until the onions are softened and translucent. This step enhances the soup’s flavor, but feel free to skip it if you’re short on time.

Combine in Crockpot: Transfer the cooked turkey breast into your crockpot. If you've sautéed the onions and garlic, add them in as well. Then, add in the diced carrots, celery, sweet potato, butternut squash, green beans, and corn.

Add Seasonings and Liquid: Pour the turkey or chicken broth over the ingredients, ensuring everything is submerged. Sprinkle in the dried thyme, dried sage, black pepper, and salt. Toss in the bay leaves and drizzle the apple cider vinegar over the top.

Cook the Soup: Cover the crockpot with its lid. Set it to cook on low for 6-8 hours or on high for 4-5 hours. The soup is ready when the vegetables are tender, and the flavors have melded beautifully.

Final Adjustments: After cooking, lift the lid and taste the soup for seasoning. Adjust with more salt or pepper if necessary. Carefully remove the bay leaves and discard them.

Serve: Using a ladle, pour the warm soup into serving bowls. Sprinkle with freshly chopped parsley for a burst of color and freshness. Enjoy this cozy bowl of autumn goodness with a slice of crusty bread or crackers!
