4 cups fresh or frozen sweet corn kernels

2 cups diced pre-cooked ham

1 large onion, finely diced

2 cloves garlic, minced

3 medium potatoes, peeled and diced into ½-inch cubes

4 cups low-sodium chicken broth

1 cup heavy cream

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and freshly ground black pepper to taste

3 green onions, chopped (for garnish)

Fresh parsley, chopped (for garnish)

Prep the Vegetables: Begin by peeling the potatoes, then dice them into ½-inch cubes. Finely dice the onion and mince the garlic. If you're using fresh sweet corn, carefully cut the kernels off the cobs and set them aside.

    Layer in the Crockpot: In a large crockpot, combine the diced potatoes, sweet corn, diced ham, finely diced onion, and minced garlic evenly. This layering helps the flavors meld beautifully as they cook.

      Add Liquids and Seasonings: Pour the low-sodium chicken broth over the mixture in the crockpot. Sprinkle in the dried thyme, smoked paprika, and add salt and pepper to taste. Stir gently to ensure that all ingredients are well mixed and coated.
