1 lb Italian sausage (choose between mild or spicy according to your preference)

1 medium onion, diced

2 cloves garlic, minced

3 medium carrots, diced

3 celery stalks, diced

4 cups vegetable or chicken broth

2 cans (15 oz each) white beans (cannellini or great northern), drained and rinsed

1 cup frozen corn

1 teaspoon dried thyme

1 teaspoon dried oregano

1 bay leaf

Salt and pepper, to taste

1 cup heavy cream

Fresh parsley or chives, chopped (for garnish)

Brown the Sausage: In a skillet over medium heat, take the Italian sausage out of its casings. Crumble the sausage into small pieces as it cooks. Continue browning until the sausage is no longer pink, which will take about 5-7 minutes. Once cooked, transfer the browned sausage into the crockpot.

    Sauté the Aromatics: Using the same skillet, add a drizzle of olive oil if needed. Sauté the diced onion, minced garlic, diced carrots, and diced celery for about 3-4 minutes, or until the vegetables start to soften. After, transfer the sautéed mixture to the crockpot.
