1 block (14 oz) firm tofu, pressed and drained

1/2 cup of your favorite BBQ sauce

1 tablespoon olive oil

1 cup cooked quinoa (white, red, or a mix)

1 cup fresh spinach, roughly chopped

1/2 cup cherry tomatoes, halved

1/2 cup corn (canned or thawed if frozen)

1 ripe avocado, sliced

2 tablespoons fresh cilantro, finely chopped

1/4 teaspoon sea salt

1/4 teaspoon freshly cracked black pepper

1/4 cup crispy fried onions (for topping)

Prepare the Tofu: Cut the pressed tofu into bite-sized cubes. In a mixing bowl, toss the tofu cubes with olive oil, sea salt, and black pepper, ensuring they are evenly coated for enhanced flavor.

    Cook the Tofu: Heat a non-stick skillet over medium-high heat. Once hot, add the seasoned tofu cubes. Sauté them for about 5-7 minutes, gently turning occasionally, until all sides are golden brown and crispy, achieving a delightful crunch.
