1/4 cup cornstarch

1/4 teaspoon sea salt

1/4 teaspoon freshly ground black pepper

2 tablespoons extra virgin olive oil

Juice of 2 fresh limes

Zest from 1 lime

1 tablespoon chili powder

1 teaspoon smoked paprika

1 tablespoon soy sauce (or tamari for a gluten-free option)

Prepare the Tofu: After draining the tofu, wrap it securely in a clean kitchen towel. Place a heavy object, like a cast-iron skillet or canned goods, on top to press out excess moisture. Leave it for at least 15 minutes; this crucial step helps achieve a crunchy texture when baked.

    Cube the Tofu: Once pressed, unwrap the tofu and cut it into small cubes, roughly 1 inch in size, ensuring even pieces for consistent cooking.
