    Melt the Chocolate: In a microwave-safe bowl, combine the semisweet chocolate chips and coconut oil. Microwave this mixture in 30-second intervals, stirring well after each interval until it is completely smooth and melted—this should take about 1 to 1.5 minutes in total.

      Combine Peanuts and Chocolate: Once the chocolate has melted, take it out of the microwave and stir in the vanilla extract (if using) for an extra layer of flavor. Immediately add the salted roasted peanuts into the melted chocolate, mixing thoroughly until all the peanuts are well coated.
