Ingredients

2 cups brown rice cereal

1 cup creamy peanut butter

1/2 cup honey (or substitute with maple syrup for a vegan option)

1/4 cup unsweetened cocoa powder

1/2 cup mini chocolate chips (choose dark or milk chocolate based on your preference)

1/4 cup chopped nuts (options: almonds, peanuts, or walnuts)

1/2 teaspoon vanilla extract

A pinch of salt

Instructions

Prepare the Pan: Start by lining an 8x8 inch baking dish with parchment paper. Make sure to leave some overhang on the sides. This will help you lift the bars out easily once they’re set.

Melt Wet Ingredients: In a medium saucepan, place the creamy peanut butter, honey (or maple syrup), unsweetened cocoa powder, and a pinch of salt. Heat over low heat, stirring continuously. Keep an eye on it to prevent boiling; you want a smooth, melted mixture.

Mix in Dry Ingredients: Once the mixture is smooth and thoroughly combined, remove the saucepan from the heat. Stir in the vanilla extract. Next, gently fold in the brown rice cereal, mini chocolate chips, and chopped nuts. Ensure that all the cereal is well-coated with the mixture, but be careful not to break the rice cereal.

Press Mixture into Pan: Transfer the mixture into your prepared baking dish. Using a greased spatula or your hands, press the mixture down firmly and evenly to create a solid layer. This will help the bars hold their shape once set.

Chill: Allow the bars to cool at room temperature for about 30 minutes. After that, place the baking dish in the refrigerator and chill for an additional 1-2 hours until the mixture is firm to the touch.

Slice and Serve: When the bars have set, use the parchment overhang to lift them out of the pan. Slice into squares or rectangles as desired. For storage, keep them in an airtight container at room temperature for a softer texture or in the refrigerator for a firmer bite.
