2 medium-sized beets (preferably organic)

2 tablespoons extra virgin olive oil

1 teaspoon fine sea salt

1/2 teaspoon garlic powder

Preheat the Oven: Preheat your oven to 350°F (175°C). Prepare a large baking sheet by lining it with parchment paper to ensure easy removal of the chips later.

    Prepare the Beets: Thoroughly wash the beets under cold water to remove any dirt or debris. Cut off the leafy greens and the root end, then peel the beets using a sharp vegetable peeler to reveal their vibrant color.

      Slice the Beets: Using a mandoline slicer for uniformity or a sharp knife, carefully slice the beets into very thin rounds, approximately 1/8 inch thick. The thinner the slices, the crunchier the final chips will be.

        Season the Slices: In a large mixing bowl, combine the sliced beets with olive oil, sea salt, garlic powder, smoked paprika, and cayenne pepper if you're looking for some extra heat. Toss the slices gently but thoroughly to ensure they are evenly coated with the seasoning.

          Arrange on Baking Sheet: Lay the seasoned beet slices out in a single layer on the prepared baking sheet. Make sure they are spaced apart and not overlapping; this is crucial for achieving maximum crispness.
