Ingredients

1 lb fresh asparagus, trimmed and cut into 1-inch pieces

4 slices bacon, diced into small pieces

1 medium onion, finely chopped

2 cloves garlic, minced

4 cups chicken or vegetable broth

1 cup heavy cream

Salt and freshly ground black pepper to taste

2 tablespoons olive oil

Optional garnishes: croutons, crispy bacon bits, fresh herbs (such as chives or parsley)

Instructions

Cook the Bacon: Heat a large pot over medium heat. Add the diced bacon and cook until crispy, approximately 5-7 minutes. Use a slotted spoon to transfer the cooked bacon to a paper towel-lined plate to drain, leaving the rendered fat in the pot.

Sauté Aromatics: In the same pot with the bacon fat, add 2 tablespoons of olive oil. Once the oil is hot, add the finely chopped onion. Sauté for about 4-5 minutes or until the onion becomes translucent. Stir in the minced garlic and cook for an additional minute, being cautious to avoid burning the garlic.

Add Asparagus: Add the chopped asparagus pieces to the pot, stirring to combine with the onions and garlic. Allow to cook for 2-3 minutes, letting the asparagus soften slightly.

Pour in Broth: Carefully add the chicken or vegetable broth to the pot. Increase the heat to bring the mixture to a gentle boil. Once boiling, reduce the heat to a simmer and let it cook until the asparagus is tender, about 10-15 minutes.

Blend the Soup: Using an immersion blender, purée the soup until it reaches a smooth consistency. If you prefer, you can transfer small batches to a traditional blender. Blend cautiously to prevent splattering and return the smooth mixture back to the pot.

Stir in Cream: With the pot over low heat, stir in the heavy cream until fully combined. Gently warm the soup, but do not let it boil. Season with salt and freshly ground black pepper to taste.

Serve: Ladle the creamy asparagus soup into individual bowls. Top each serving with the reserved crispy bacon and your choice of optional garnishes, such as croutons or fresh herbs. Enjoy your delightful bowl of Creamy Asparagus Bliss!
