8 oz (225g) short pasta (macaroni or any preferred shape)

1 cup (250g) mixed berries (such as strawberries, blueberries, and raspberries)

1 cup (240ml) coconut milk (full-fat for creaminess)

1 cup (240g) ricotta cheese

1/2 cup (100g) sugar or maple syrup (adjust to your preferred sweetness)

1 tsp pure vanilla extract

1/2 tsp ground cinnamon

Zest of 1 lemon (for brightness)

1/4 cup (30g) grated coconut (optional, for a tropical touch)

1/4 cup (30g) chopped nuts (such as almonds or walnuts, optional for crunch)

Fresh mint leaves for garnish (optional, adds freshness)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a rolling boil. Add the pasta and cook according to the package instructions until al dente. Drain thoroughly and set aside in a large mixing bowl.

    Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking.
