Ingredients

4 boneless, skinless chicken breasts

1 cup sun-dried tomatoes packed in olive oil, drained and finely chopped

1 cup heavy cream

1 cup freshly grated Parmesan cheese

4 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and freshly ground black pepper, to taste

2 tablespoons extra virgin olive oil

Fresh basil leaves, for garnish (optional)

A pinch of red pepper flakes, for added heat (optional)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C) to ensure it's hot when you're ready to bake.

Sear the Chicken: In a spacious skillet, heat the olive oil over medium-high heat. While the oil heats, season the chicken breasts generously with salt and freshly ground black pepper on both sides. Once the oil is shimmering, carefully add the seasoned chicken breasts. Sear each breast for about 4-5 minutes per side, or until they develop a beautiful golden brown crust. Once seared, transfer the chicken to a plate and set aside.

Create the Sauce: Using the same skillet, reduce the heat to medium and add the minced garlic. Sauté for about 30 seconds, stirring frequently until the garlic is fragrant and just golden. Add the chopped sun-dried tomatoes, cooking for an additional 1-2 minutes to infuse the oil with their flavor. Lower the heat slightly and pour in the heavy cream, stirring well to combine. Bring the mixture to a gentle simmer.

Add Cheese and Seasoning: Gradually stir in the grated Parmesan cheese along with the Italian seasoning, mixing thoroughly until the cheese melts and the sauce becomes rich and creamy. Taste the sauce and adjust the seasoning with more salt and pepper, if necessary. If you enjoy a bit of heat, now is the time to sprinkle in some red pepper flakes.

Combine and Bake: Return the seared chicken breasts to the skillet, ensuring they are well-coated with the creamy sauce. If your skillet is oven-safe, you can place it directly in the oven. Otherwise, carefully transfer the chicken and sauce to a prepared baking dish. Bake in the preheated oven for 25-30 minutes, or until the chicken is fully cooked and reaches an internal temperature of 165°F (75°C).

Serve: Upon taking the chicken out of the oven, allow it to rest for a few minutes to retain its juices. Serve the chicken warm, generously drizzled with the creamy sun-dried tomato sauce. For a fresh touch, garnish with vibrant basil leaves, and if you like an extra kick, add a light sprinkle of red pepper flakes.
