Easy Peach Yogurt Popsicles

2 large ripe peaches, peeled and diced

1 cup plain Greek yogurt (or your favorite yogurt)

1/2 cup honey or maple syrup (adjust based on your sweetness preference)

1 teaspoon pure vanilla extract

1/4 cup coconut milk (optional, for a creamier texture)

Pinch of salt

Fresh mint leaves (optional, for garnish)

Prepare the Peaches: Begin by washing the peaches thoroughly. Peel the skins off, and remove the pit from each peach. Dice the peaches into small, bite-sized pieces. Reserve a few small pieces for garnish later, if desired.

    Blend the Mixture: In a blender, add the diced peaches, Greek yogurt, honey or maple syrup, vanilla extract, coconut milk (if using), and a pinch of salt. Blend everything together until you achieve a smooth, creamy consistency.

      Taste and Adjust: Take a moment to taste the blended mixture. If you prefer a sweeter popsicle, feel free to add more honey or maple syrup according to your taste, then blend again until combined.

        Fill the Molds: Carefully pour the peach yogurt mixture into popsicle molds. Be sure to leave a small space at the top of each mold to allow for expansion as they freeze. If you have any leftover diced peaches, you can either fold them into the mixture or layer them at the bottom of the molds prior to pouring in the yogurt mixture.

          Insert Sticks: Position popsicle sticks into the center of each mold, pushing them down gently to stabilize. If your molds are open at the top, cover them with aluminum foil to help hold the sticks in place while freezing.

            Freeze: Place the filled molds in the freezer. Allow them to freeze for at least 5 to 6 hours, or until they are completely solid.

              Unmold and Serve: To release the popsicles, run warm water over the outside of the molds for a few seconds to help loosen them. Gently pull on the sticks to remove the popsicles without breaking them.

                Garnish & Enjoy: Serve your popsicles immediately, garnishing with fresh mint leaves and any reserved peach pieces if you saved them. Enjoy your refreshing summer treat!
