6 large eggs

1/2 cup shredded mozzarella cheese

1/4 cup fresh basil, coarsely chopped

1 teaspoon dried oregano

Salt and freshly cracked pepper, to taste

2 tablespoons extra virgin olive oil

    Sauté the Vegetables: Add the finely diced onion to the skillet, sautéing for approximately 3–4 minutes until it turns translucent. Then, stir in the minced garlic and continue cooking for an additional 1 minute, allowing the garlic to release its fragrant aroma.

      Cook the Zucchini: Increase the heat slightly and add the sliced zucchini to the skillet. Season with salt, pepper, and dried oregano. Sauté for 5–7 minutes, stirring frequently, until the zucchini is tender yet retains a slight crispness.

        Whisk the Eggs: In a medium mixing bowl, crack the eggs and whisk them together until fully blended. Gently fold in the chopped basil, shredded mozzarella, and grated Parmesan cheese until evenly distributed.

          Combine: Carefully pour the egg mixture over the sautéed vegetable medley in the skillet. Use a spatula to stir gently, ensuring that the vegetables are well incorporated throughout the eggs.
