Ingredients

1 pound ground turkey (or alternatively, diced turkey breast)

1 cup wild rice blend (uncooked)

4 cups low-sodium chicken broth

1 cup diced carrots

1 cup diced celery

1 cup diced onion

3 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 bay leaf

1 teaspoon salt (or adjust to taste)

1/2 teaspoon black pepper (or adjust to taste)

1 cup fresh kale or spinach, chopped

1 cup heavy cream or coconut milk (for dairy-free option)

Juice of 1 lemon

Optional garnish: chopped fresh parsley

Instructions

Brown the Turkey: In a skillet set over medium heat, cook the ground turkey until it is browned and cooked through, about 5-7 minutes. Drain any excess fat and transfer the turkey to your crockpot.

Add Vegetables: In the crockpot, add the diced carrots, diced celery, diced onions, and minced garlic to the browned turkey. Stir to combine.

Incorporate Rice and Seasonings: Next, add the uncooked wild rice blend to the mixture, followed by the low-sodium chicken broth. Sprinkle in the dried thyme, dried rosemary, bay leaf, salt, and black pepper. Stir all ingredients thoroughly.

Cook: Cover the crockpot and cook on low for 6-8 hours or on high for 4-5 hours, until the wild rice is tender and the flavors have melded together beautifully.

Final Touches: Approximately 30 minutes before you plan to serve, stir in the chopped kale or spinach and pour in the heavy cream (or coconut milk). Allow the mixture to warm through, stirring occasionally.

Add Lemon Juice: Just before serving, squeeze in the fresh lemon juice to brighten the flavors. Adjust the seasoning if needed by tasting the soup and adding more salt or pepper as desired.

Serve: Ladle the hearty soup into bowls and, if you like, garnish with freshly chopped parsley for an added touch. This dish pairs wonderfully with crusty bread or crispy crackers for a cozy fall meal.

Presentation Tips: Consider serving the soup in rustic bowls and adding a drizzle of cream or a sprinkle of lemon zest on top for an eye-catching finish. Enjoy!
