2 boneless, skinless chicken breasts

Salt and pepper, to taste

1 tablespoon olive oil

1 ripe mango, diced

1 cup unsweetened shredded coconut

1 cup cherry tomatoes, halved

1 avocado, diced

1/4 cup red onion, thinly sliced

1/4 cup fresh cilantro, chopped

Juice of 1 lime

1 tablespoon honey

1/4 teaspoon chili flakes (optional, for a spicy kick)

Mixed greens (such as arugula or spinach) for serving

Cook the Chicken: Season both sides of the chicken breasts liberally with salt and pepper. In a medium skillet, heat olive oil over medium heat. Once hot, add the chicken breasts and cook for about 6-8 minutes on each side, or until they are thoroughly cooked through and reach an internal temperature of 165°F. Once done, remove from the skillet and let cool on a plate. Once cooled, shred the chicken using two forks or your hands.
