Ingredients

12 oz (340g) spaghetti or linguine

3 ripe medium tomatoes, diced into small cubes

1 ripe avocado, pitted and diced into bite-sized pieces

2 cloves garlic, finely minced

1/4 cup fresh basil leaves, chopped coarsely

1/4 cup high-quality extra virgin olive oil

Juice of 1 fresh lemon

Salt and freshly cracked black pepper, to taste

1/4 tsp red pepper flakes (optional, for a spicy kick)

Grated Parmesan cheese, for serving (optional)

Extra fresh basil leaves, for garnish (optional)

Instructions

Cook the Pasta: In a large pot, bring generously salted water to a rolling boil. Add the spaghetti or linguine and cook according to the package directions until al dente, which typically takes about 8-10 minutes. Before draining, carefully reserve 1 cup of the pasta water; this will help adjust the sauce's consistency later. Drain the pasta in a colander.

Prepare the Dressing: In a spacious mixing bowl, combine the diced tomatoes, avocado chunks, minced garlic, chopped basil, extra virgin olive oil, and the freshly squeezed lemon juice. Using a gentle folding motion, mix the ingredients together to combine thoroughly while ensuring you don’t mash the avocado. The goal is to maintain the avocado's texture.

Combine Pasta and Sauce: Once the pasta is drained, add it directly to the bowl with the tomato and avocado mixture. If the mixture appears too dry, gradually add reserved pasta water, a few tablespoons at a time, until the desired creamy consistency is achieved.

Season to Taste: Sprinkle in salt, freshly cracked black pepper, and red pepper flakes (if desired) to enhance the flavors. Toss everything gently but thoroughly to ensure an even distribution of seasoning.

Serve: Transfer the pasta into individual plates or bowls. If desired, generously sprinkle freshly grated Parmesan cheese over the top, along with an extra handful of chopped basil for an additional burst of flavor.

Enjoy: Serve immediately while the pasta is still warm. Savor the vibrant and fresh flavors in every bite!
