3 large ripe bananas

1 cup creamy peanut butter

1 cup chopped roasted unsalted peanuts

1 cup chocolate chips (dark or milk, based on your preference)

2 tablespoons coconut oil

Sea salt (to taste)

Prepare the Bananas: Start by peeling the bananas and slicing them into thick rounds, approximately 1-inch wide. Arrange the banana slices in a single layer on a baking sheet lined with parchment paper.

    Add Peanut Butter: Take a teaspoon and scoop a generous dollop of creamy peanut butter onto the flat side of half of the banana slices. Gently place another banana slice on top of each peanut butter dollop to create banana sandwiches.

      Coat with Peanuts: Sprinkle the chopped roasted peanuts over the peanut butter-filled sandwiches, pressing down slightly to help them adhere well.

        Chill the Bites: Transfer the baking sheet to the freezer and let the banana bites chill for about 1 hour, or until they are firm to the touch.

          Melt the Chocolate: In a microwave-safe bowl, combine the chocolate chips and coconut oil. Heat the mixture in the microwave in 30-second intervals, stirring vigorously after each interval, until the chocolate is fully melted and smooth.

            Dip the Bites: Once the banana sandwiches have set in the freezer, take them out and individually dip each one into the melted chocolate, making sure to coat them thoroughly. Allow any excess chocolate to drip back into the bowl.
