1/4 cup honey or maple syrup

1 cup coconut cream (ensure it's chilled)

1/2 cup plain or vanilla Greek yogurt

1/4 cup coconut oil (melted)

1 teaspoon vanilla extract

1/4 cup unsweetened shredded coconut

1/2 cup graham cracker crumbs (or substitute with almond flour for a gluten-free version)

1 tablespoon freshly squeezed lemon juice

A pinch of salt

Cook the mixture for approximately 5 minutes, stirring gently until the blueberries soften and start to break down. Once done, remove from heat and allow it to cool slightly.

    Blend the Coconut Cream Mixture: In a blender or food processor, add the chilled coconut cream, Greek yogurt, melted coconut oil, vanilla extract, and a pinch of salt. Blend the ingredients together until the mixture is smooth and creamy, ensuring there are no lumps.

      Make the Base: In a medium bowl, combine the graham cracker crumbs (or almond flour) with a tablespoon of melted coconut oil. Mix well until the crumbs are fully coated in oil. Press this mixture firmly and evenly into the bottom of an 8x8-inch (20x20 cm) dish to create a solid base.

        Layer the Ingredients: Pour the creamy coconut mixture evenly over the graham cracker base, smoothing it out using a spatula. Next, gently spoon the blueberry mixture on top of the coconut layer.
