Ingredients

2 ripe bananas

2 cups Greek yogurt (choose plain or coconut-flavored for a tropical twist)

1 cup coconut milk (you can use either canned or carton varieties)

2 tablespoons honey or maple syrup (adjust according to desired sweetness)

1 teaspoon pure vanilla extract

A pinch of salt

½ cup unsweetened shredded coconut (for a healthier option)

Optional toppings: chopped nuts, mini chocolate chips, or fresh fruit slices

Instructions

Prep the Bananas: Begin by peeling the ripe bananas and placing them into a blender or food processor.

Blend the Base: Add the Greek yogurt, coconut milk, honey (or maple syrup), vanilla extract, and a pinch of salt into the blender with the bananas. Blend everything together until you achieve a smooth and creamy consistency.

Incorporate Coconut: Using a spatula, fold in the shredded coconut gently by hand, making sure to distribute it evenly throughout the banana-yogurt mixture without over-blending.

Prepare the Molds: Carefully pour the coconut-banana yogurt mixture into popsicle molds. Leave a small amount of space at the top of each mold to allow for expansion as the mixture freezes.

Insert Sticks: If your molds do not include built-in sticks, place wooden popsicle sticks into the center of each filled mold, ensuring they stand upright.

Freeze: Position the molds in the freezer and let them freeze for at least 4 to 6 hours, or until they are completely solid.

Unmold & Serve: When ready to enjoy, run the molds briefly under warm water to help loosen the pops. Gently wiggle and pull each pop from its mold and savor immediately!

Optional Toppings: To elevate your pops, dip them in melted chocolate and sprinkle with your favorite toppings such as chopped nuts, fruit slices, or additional shredded coconut for extra texture and flavor.

Prep Time: 15 minutes | Total Time: 4-6 hours | Servings: 8 Pops

Presentation Tips: Serve the pops on a platter or in a decorative cup with a colorful paper straw for a fun tropical presentation.
