Ingredients

2 ripe pineapples

1 can (14 oz) full-fat coconut milk

1/4 cup honey or maple syrup (adjust for desired sweetness)

1 teaspoon vanilla extract

1/2 cup shredded unsweetened coconut

1/4 cup crushed almonds or macadamia nuts (optional for added crunch)

Fresh mint leaves for garnish (optional)

Instructions

Prepare the Pineapples: Begin by slicing the tops off the pineapples to create a lid. Using a pineapple corer or a sharp knife, carefully remove the inner flesh, leaving about 1/4 inch of flesh along the sides to form sturdy bowls. Chop the extracted pineapple flesh into small, bite-sized chunks and set aside for later use.

Create the Coconut Mixture: In a medium-sized mixing bowl, whisk together the coconut milk, honey (or maple syrup), and vanilla extract until the mixture is smooth and uniform. Taste the mixture, and if you prefer a sweeter flavor, feel free to add more honey or maple syrup to achieve your desired sweetness.

Mix in the Pineapple: Gently fold the reserved chopped pineapple chunks and shredded coconut into the coconut milk mixture. If you’re adding nuts for a delightful crunch, incorporate them into the mixture at this stage as well.

Fill the Pineapple Cups: Carefully pour the coconut mixture into each of the hollowed pineapple cups, filling them to the brim without overflowing.

Freeze the Cups: Place the filled pineapple cups upright in the freezer. Allow them to freeze for a minimum of 4-6 hours, or until the coconut mixture is completely set and firm to the touch.

Serve the Cups: Once frozen, take the pineapple cups out of the freezer and let them sit at room temperature for approximately 5 minutes. This will make them easier to cut or scoop. Use a sharp knife to slice the cups into wedges or scoop out portions with a spoon. For a vibrant finishing touch, garnish with fresh mint leaves.

Enjoy the Treat: Delight your friends and family with these Tropical Paradise Coconut Pineapple Cups, or savor them yourself as a deliciously refreshing dessert on a warm day!
