Ingredients

1 cup fresh raspberries, or 1 cup frozen raspberries (thawed and drained)

1 cup shredded unsweetened coconut

1/2 cup Greek yogurt (choose plain or vanilla)

2 tablespoons honey (maple syrup can be used for a vegan alternative)

1 teaspoon pure vanilla extract

A pinch of salt

1/4 cup dark chocolate, chopped (optional, for drizzling)

Instructions

Prepare the Raspberries:

If you're using fresh raspberries, rinse them thoroughly under cold water and let them drain completely. For frozen raspberries, ensure they are fully thawed and drain off any excess liquid to avoid a watery mixture.

      Blend the Base:

In a high-powered blender or a food processor, combine the raspberries, Greek yogurt, honey, vanilla extract, and a pinch of salt. Blend until you achieve a smooth consistency, making sure to leave some small raspberry bits for added texture.

          Incorporate the Coconut:

Once blended, transfer the raspberry mixture to a medium mixing bowl. Gently fold in the shredded coconut using a spatula until the coconut is evenly distributed throughout the mixture.

              Mold the Mixture:

Line a mini muffin tin or silicone molds with parchment paper for easy removal, or lightly coat them with cooking spray. Spoon the raspberry-coconut mixture into each mold, filling them to the brim. Press down lightly to ensure each bite holds its shape once frozen.

                  Freeze:

Place the filled molds in the freezer and allow them to chill for approximately 2 to 3 hours, or until they are completely firm and set.

                      Prepare the Optional Chocolate Drizzle:

If you're opting for a chocolate drizzle, melt the chopped dark chocolate in a microwave-safe bowl in short bursts of 20-30 seconds, stirring in between, or use a double boiler until smooth. Let it cool slightly before drizzling for the best effect.

                          Unmold and Drizzle:

Once the raspberry coconut bites are frozen solid, carefully remove them from the molds. Using a fork, drizzle the melted chocolate over the top of each bite for a delightful finish.

                              Serve or Store:

Enjoy these refreshing bites immediately, or store them in an airtight container in the freezer where they will keep well for up to a month.

Prep Time: 15 minutes | Total Time: 3 hours 15 minutes | Servings: 12-15 bites

                                    - Presentation Tips: Arrange the bites on a colorful serving platter and garnish with a few fresh raspberries or a sprinkle of shredded coconut for a beautiful display.
