Ingredients

2 cups fresh strawberries, hulled and chopped

1 cup Greek yogurt (you can use plain or vanilla for added flavor)

1/4 cup honey or maple syrup (adjust according to your sweetness preference)

1 tablespoon fresh lemon juice

1 teaspoon pure vanilla extract

1/2 cup granola or crushed nuts (optional, for a delicious topping)

Instructions

Blend the Strawberries: In a blender or food processor, combine the chopped strawberries, Greek yogurt, honey (or maple syrup), lemon juice, and vanilla extract. Blend on high speed until the mixture reaches a smooth and creamy consistency, ensuring all ingredients are well incorporated.

Taste and Adjust: Once blended, taste the mixture. If you prefer a sweeter treat, feel free to add more honey or maple syrup to achieve your desired sweetness, then blend again briefly to mix.

Pour into Molds: Carefully pour the creamy strawberry mixture into popsicle molds. Leave a small gap at the top of each mold to allow the mixture to expand as it freezes. If you’re using granola or crushed nuts, sprinkle them generously on top before securing the lids on the molds.

Insert Sticks: Take the popsicle sticks and insert them gently into the center of each mold, ensuring they are standing upright.

Freeze: Place the filled molds in the freezer and allow them to freeze for at least 4-6 hours, or until the bars are completely solid. For best results, freeze overnight.

Unmold the Bars: When ready to enjoy, take the molds out of the freezer. To release the frozen bars, run warm water over the outside of the molds for a few seconds to loosen them, then gently pull on the sticks to detach the bars.

Serve and Enjoy: Serve your homemade frozen strawberry bars immediately for a refreshing treat, or store them in a freezer-safe container for up to a month for future snacking!
