1 teaspoon vanilla extract

1 1/2 cups shredded carrots (about 3 medium carrots)

1 cup crushed pineapple, thoroughly drained

1/2 cup unsweetened shredded coconut

1/2 cup chopped walnuts or pecans

1 teaspoon ground cinnamon

1/2 teaspoon ground ginger

1/4 teaspoon ground nutmeg

Pinch of salt

1 cup cream cheese, softened to room temperature

1/4 cup powdered sugar

1 teaspoon fresh lemon juice

Prepare the Yogurt Base: In a medium mixing bowl, blend together the plain Greek yogurt, honey (or maple syrup), and vanilla extract. Whip until smooth and all ingredients are well incorporated. Set this mixture aside.

    Incorporate the Carrot Cake Ingredients: In another bowl, combine the shredded carrots, drained crushed pineapple, shredded coconut, chopped walnuts or pecans, ground cinnamon, ground ginger, ground nutmeg, and a pinch of salt. Stir thoroughly until all the components are evenly mixed and well-coated with spices.

      Combine Both Mixtures: Carefully fold the carrot mixture into the yogurt base using a spatula, making sure not to over-mix. Aim for a uniform blend while maintaining the integrity of the shredded carrots.
