Ingredients

2 cups plain Greek yogurt (or your favorite flavored yogurt)

1 cup granola (any blend you love)

1 cup mixed nuts (such as almonds, walnuts, or cashews)

½ cup mini chocolate chips

½ cup dried fruits (like raisins, cranberries, or chopped apricots)

1 teaspoon vanilla extract

½ teaspoon ground cinnamon (optional)

½ cup crushed cereal (e.g., Cheerios or Rice Krispies)

Silicone coin molds (or any round molds that you have on hand)

Instructions

Prepare the Yogurt Mixture: In a large mixing bowl, combine the Greek yogurt, vanilla extract, and cinnamon (if you're using it). Use a spatula or spoon to stir the mixture until it's smooth and well incorporated.

Add Texture: Gently fold in the granola, mixed nuts, mini chocolate chips, dried fruits, and crushed cereal. Mix until all the ingredients are evenly coated with yogurt.

Mold the Coins: Use a spoon to fill each silicone coin mold with the yogurt mixture. Make sure to fill them to the top. Press down softly on the mixture to pack it in firmly.

Freeze: Place the filled molds in the freezer. Allow them to freeze for a minimum of 4 hours, or until they are completely solid.

Release the Coins: Once the yogurt coins are frozen solid, carefully remove them from the molds by gently pulling at the edges. Use your fingers to pop them out if needed.

Serve or Store: You can enjoy these delightful yogurt trail mix coins right away as a snack or dessert. Alternatively, store them in a zip-lock freezer bag or an airtight container in the freezer for up to 2 months for later enjoyment.

Optional Toppings for Serving: For an added touch of sweetness, drizzle some honey or maple syrup over the frozen coins when serving. You can also pair them with fresh fruit for an extra burst of flavor.
