Prepare the Yogurt Mixture: In a large mixing bowl, combine the Greek yogurt, honey (or maple syrup), and vanilla extract. Use a whisk or spatula to mix thoroughly until the mixture is creamy and smooth, ensuring no lumps remain.

    Incorporate Coconut: Gently fold in the shredded coconut with a spatula, distributing it evenly through the yogurt mixture. This will add texture and coconut flavor to each bite.

      Fill the Mold: Lightly spray a silicone donut mold with cooking spray to prevent sticking. Using a spoon, carefully fill each donut ring with the yogurt mixture, stopping when each is approximately 3/4 full. Gently tap the mold against the countertop to eliminate any air bubbles that may have formed.

        Freeze the Rings: Transfer the mold to the freezer and allow it to freeze for about 2-3 hours, or until each yogurt ring is solid and fully frozen.

          Make the Chocolate Coating: While the yogurt rings freeze, prepare the chocolate coating. In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Heat in the microwave in 30-second intervals, stirring well after each interval until the mixture is completely melted and smooth.

            Remove and Dip: Once the yogurt rings are frozen, carefully release them from the mold by gently pulling them out from the sides. Dip each ring halfway into the melted chocolate, allowing any excess chocolate to drip back into the bowl for an even coating.
