Instructions

Prepare the Yogurt Mixture: In a medium-sized mixing bowl, combine the Greek yogurt, honey, and cooled brewed coffee. Use a whisk or a spatula to stir the mixture thoroughly until it reaches a smooth, well-blended consistency. Set it aside to allow the flavors to meld.

Make the Coffee Crumble: In a separate bowl, combine the rolled oats, almond flour, brown sugar, instant coffee granules, and cinnamon. Mix these dry ingredients together until evenly distributed. Add the melted coconut oil (or butter) to the dry mix, stirring until the mixture forms a crumbly texture that holds together when pressed.

Layer Your Mixture: Preheat your freezer. Line a mini muffin tin with paper liners or coat each cup lightly with cooking spray for easy removal. Take about a teaspoon of the yogurt mixture and spoon it into the bottom of each muffin cup, smoothing the top with the back of the spoon. Next, sprinkle a layer of the coffee crumble on top, pressing it down gently to ensure it adheres to the yogurt layer.

Repeat Layering: Depending on the depth of your muffin tin cups, you can create one or two layers. Alternate adding the yogurt mixture and coffee crumble until the cups are filled, ensuring the final layer is a generous sprinkle of the coffee crumble on top.

Freeze: Carefully transfer the muffin tin to the freezer. Allow the bites to freeze for at least 4-6 hours, or until they are solid and firm to the touch.

Serve & Garnish: Once the bites are fully frozen, gently pop them out of the muffin tin. If you used paper liners, you can easily peel these away. For an added treat, sprinkle each frozen bite with chocolate chips or crushed nuts right before serving.

Enjoy: These delightful frozen bites are best enjoyed straight from the freezer. Store any leftovers in an airtight container in the freezer where they will remain fresh for up to 2 weeks.
