Ingredients

2 cups plain Greek yogurt

1/4 cup honey

1/4 cup chia seeds

1/2 teaspoon vanilla extract

1/2 cup granola (store-bought or homemade)

1/2 cup mixed berries (fresh blueberries, strawberries, or raspberries, or frozen)

Pinch of salt

Instructions

Mix the Base: In a large mixing bowl, combine the plain Greek yogurt, honey, vanilla extract, and a pinch of salt. Use a whisk to blend the mixture until it is smooth and creamy, ensuring the honey is fully incorporated.

Incorporate Chia Seeds: Sprinkle the chia seeds into the yogurt mixture. Use a spatula or spoon to stir the mixture thoroughly, making sure that the chia seeds are evenly distributed. This step is crucial as the chia seeds will absorb moisture and help create a delightful texture in the bites.

Add the Extras: Gently fold in the granola and mixed berries to the yogurt mixture. If using fresh berries, take care not to mash them. The goal is to have the berries and granola evenly mixed throughout the yogurt base for each bite.

Shape the Clusters: Using a tablespoon or an ice cream scoop, portion out the mixture and drop rounded mounds onto a parchment-lined baking sheet. Leave some space between each cluster, as they will expand slightly while freezing.

Freeze: Transfer the baking sheet to your freezer. Allow the clusters to freeze for at least 3 to 4 hours, or until they are completely solid and firm to the touch.

Serve and Enjoy: Once the clusters are thoroughly frozen, carefully remove them from the baking sheet and store them in an airtight container in the freezer. These healthy bites make for a perfect snack or dessert that you can enjoy directly from the freezer!
