At the heart of this recipe is Greek yogurt, a star ingredient that sets the foundation for the wedges. Unlike regular yogurt, Greek yogurt is strained to remove excess whey, resulting in a thicker consistency and tangier flavor. This straining process also concentrates its nutritional value, making Greek yogurt a powerhouse of health benefits.

Ingredients

2 cups of Greek yogurt (choose plain or vanilla based on your preference)

1/4 cup of pure maple syrup

1 teaspoon of vanilla extract

1 1/2 cups of your favorite granola

1/2 cup of mixed nuts (chopped; optional for added crunch)

1/4 cup of dried fruits (such as cranberries or apricots; optional for sweetness)

A pinch of sea salt

Fresh fruit slices for garnish (suggestions include strawberries or bananas)

Instructions

Prepare the Yogurt Mixture: In a large mixing bowl, combine the Greek yogurt, pure maple syrup, and vanilla extract. Use a whisk or spatula to stir thoroughly, ensuring the mixture is smooth and creamy without any lumps.

Incorporate Granola and Add-Ins: Gently fold in the granola, chopped nuts (if using), and dried fruits (if desired), along with a pinch of sea salt. Mix carefully to evenly distribute the ingredients throughout the yogurt without breaking down the granola.

Line a Baking Dish: Take a rectangular baking dish (approximately 9x13 inches) and line it with parchment paper. Make sure to leave some overhang on the sides; this will make it easier to remove the frozen yogurt later.

Spread the Mixture: Pour the delicious yogurt granola mixture into the prepared baking dish. Using a spatula, spread and firmly press down the mixture to create an even, flat surface.

Freeze: Place the dish in the freezer. Allow it to freeze for at least 4-6 hours, or until the mixture is completely solid. For quicker results, you can spread the mixture thinner.

Slice into Wedges: Once the yogurt is fully frozen, take the dish out of the freezer. Carefully lift the solid yogurt block from the dish using the parchment paper overhang. Place it on a cutting board. Use a sharp knife to slice the frozen block into wedges or bars according to your preferred size.

Serve: Serve your frozen yogurt wedges garnished with fresh fruit slices of your choice. For an extra touch of sweetness, drizzle a bit of maple syrup on top. Enjoy right away or store any leftovers in an airtight container in the freezer for up to two weeks.
