Ingredients

1 cup plain Greek yogurt

1/4 cup honey or maple syrup

1 tablespoon matcha powder

1 teaspoon vanilla extract

1/2 cup mixed berries (including strawberries, blueberries, and raspberries)

1/4 cup granola (optional, for added crunch)

Silicone ice cube tray or muffin tray

Instructions

Create the Yogurt Mixture: In a medium mixing bowl, combine the Greek yogurt, honey or maple syrup, matcha powder, and vanilla extract. Use a whisk or spoon to blend the ingredients until the mixture is completely smooth and well-combined. You should notice a lovely green hue from the matcha as it blends into the yogurt.

Prep the Berries: Rinse the mixed berries under cold running water to clean them. After rinsing, gently pat them dry using a paper towel. If you are using strawberries, slice them into manageable bite-sized pieces, keeping them uniform for easy eating.

Fill the Molds: Using a spoon, add about one tablespoon of the matcha yogurt mixture into each section of your silicone ice cube tray or muffin tray. Fill each section about halfway full.

Incorporate the Berries: Delicately press a few pieces of the prepared berries into the yogurt mixture in each mold. Follow this by adding a bit more of the yogurt mixture on top, ensuring the berries are completely covered. If desired, sprinkle a small amount of granola on top for an added crunchy texture.

Freeze Until Solid: Place the tray in the freezer, carefully ensuring it is level. Allow the yogurt bites to freeze for at least 4-6 hours, or until they are fully solid.

Release the Bites: After freezing, gently twist the silicone tray or pull it apart to unmold the frozen yogurt bites. They should pop out easily. Serve immediately, or place them in an airtight container for storage in the freezer to enjoy later.

Savor the Flavor: These refreshing bites make the perfect snack on a hot day or a delightful light dessert. Enjoy your homemade frozen yogurt bites filled with fruity goodness!
