Ingredients

1 cup plain Greek yogurt

1 cup pumpkin puree (either canned or homemade)

1/4 cup honey or maple syrup (adjust based on desired sweetness)

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/4 teaspoon allspice

2 cups oat flour (or regular all-purpose flour)

1 tablespoon baking powder

1/4 teaspoon salt

Coconut oil or non-stick cooking spray (for greasing the pan)

For the Topping:

1/4 cup crushed graham crackers

1 tablespoon melted butter or coconut oil

1 teaspoon powdered sugar (optional)

Instructions

Prepare the Donut Batter:

In a large mixing bowl, combine the plain Greek yogurt, pumpkin puree, honey (or maple syrup), and vanilla extract. Mix thoroughly until you achieve a smooth and well-blended consistency.

      Incorporate the Spices:

Add the ground cinnamon, nutmeg, ginger, and allspice to the yogurt mixture. Stir well until the spices are evenly incorporated throughout the batter.

          Combine Dry Ingredients:

In a separate bowl, whisk together the oat flour, baking powder, and salt. Gradually fold the dry mixture into the wet ingredients using a spatula, mixing until just combined. Be cautious not to overmix, as this could result in dense donuts!

              Preheat the Oven:

Preheat your oven to 350°F (175°C). Lightly grease a donut pan with coconut oil or non-stick cooking spray to prevent sticking.

                  Fill the Donut Pan:

Transfer the donut batter to a piping bag or a ziplock bag with a corner snipped off. Pipe the batter into each cavity of the donut pan, filling each one approximately 2/3 full to allow for rising.

                      Bake the Donuts:

Place the filled donut pan in the preheated oven and bake for about 10-12 minutes, or until a toothpick inserted into the center of a donut comes out clean. Allow the donuts to cool for a few minutes in the pan before carefully transferring them to a wire rack to cool completely.

                          Prepare the Topping:

In a small mixing bowl, combine the crushed graham crackers with melted butter (or coconut oil) and powdered sugar (if using). Mix until everything is well combined and crumbly.

                              Prepare the Frozen Yogurt:

While the donuts are cooling, prepare the frozen yogurt topping by placing the Greek yogurt in the freezer for about 30 minutes. Stir the yogurt every 10 minutes until it becomes semi-frozen and scoopable.

                                  Assemble the Donuts:

Once the donuts have completely cooled, top each one with a generous scoop of the semi-frozen Greek yogurt. Sprinkle the graham cracker topping over the yogurt to mimic the delightful crust of a pumpkin pie.

                                      Freeze and Serve:

Place the assembled donuts in the freezer for about 1 hour to firm up the yogurt. Once ready, serve the donuts cold and enjoy the delicious fusion of flavors in your Frozen Yogurt Pumpkin Pie Donuts!

Prep Time: 20 minutes | Total Time: 1 hour 30 minutes | Servings: 12 donuts

Presentation Tips: Serve the donuts on a decorative platter with a dusting of additional cinnamon on top for an inviting appearance. Consider adding some fresh mint leaves for a pop of color!
