Frozen Yogurt Strawberry Oat Pops

2 cups plain Greek yogurt

1 cup fresh strawberries, hulled and halved

1/2 cup rolled oats

1/4 cup honey or maple syrup (to taste)

1 teaspoon pure vanilla extract

A pinch of salt

Optional toppings: crushed nuts, granola, or shredded coconut for added texture

Instructions
 

Prepare the Strawberry Mixture: In a blender or food processor, combine the hulled and halved strawberries with honey or maple syrup. Blend on medium speed until smooth, ensuring to keep some strawberry bits for added texture if you prefer. Set the mixture aside in a bowl.

    Mix the Yogurt Base: In a large mixing bowl, combine the plain Greek yogurt, rolled oats, pure vanilla extract, and a pinch of salt. Using a spatula or wooden spoon, stir the ingredients together until the yogurt is smooth and the oats are evenly distributed.

      Layer the Pops: Take your popsicle molds and begin filling them with the yogurt mixture. Spoon in a generous amount, pressing it down slightly to eliminate any air pockets for a firmer pop.

        Add the Strawberry Layer: Following the yogurt layer, pour in a tablespoon or two of the prepared strawberry mixture onto each yogurt layer. Using a skewer or a toothpick, gently swirl the two mixtures together. This will create a beautiful marbled effect.

          Repeat Layers: Alternate between adding layers of the yogurt mixture and strawberry mixture until the molds are filled to the top, leaving a small gap to allow for expansion as they freeze.

            Insert Sticks and Freeze: Carefully insert the popsicle sticks into the center of each mold. Position the molds in the freezer and freeze for a minimum of 4 to 6 hours, or until the pops are completely solid.

              Unmold and Serve: When you're ready to enjoy your Froyo pops, run the molds under warm water for a few seconds to loosen them. Carefully remove the pops and enjoy immediately. Any extras can be stored in an airtight container in the freezer for future treats!
