2 medium zucchinis, sliced into thick rounds

1 yellow bell pepper, cut into long strips

1 red bell pepper, cut into long strips

1 medium red onion, cut into wedges

8 ounces (about 225g) cherry tomatoes, left whole

3 tablespoons extra virgin olive oil

4 cloves garlic, finely minced

1 tablespoon fresh rosemary, finely chopped

1 tablespoon fresh thyme, finely chopped

1 tablespoon balsamic vinegar

Sea salt and freshly cracked black pepper, to taste

Fresh parsley, chopped, for garnish
