Ingredients

1 lb large shrimp, peeled and deveined

2 tablespoons extra virgin olive oil

4 cloves garlic, finely minced

Zest and juice of 2 fresh limes

1 teaspoon chili powder

½ teaspoon ground cumin

Salt and black pepper to taste

1 ripe avocado, diced

1 cup cherry tomatoes, halved

½ cup red onion, finely chopped

1 small bunch of fresh cilantro, chopped

1 head of romaine lettuce or butter lettuce, leaves separated for wrapping

Optional: Sriracha or your favorite hot sauce for serving

Instructions

Marinate the Shrimp: In a medium-sized mixing bowl, whisk together the olive oil, minced garlic, lime zest, lime juice, chili powder, cumin, and a pinch of salt and pepper. Add the shrimp to the bowl and toss until they are fully coated in the marinade. Cover and let the shrimp marinate at room temperature for at least 15 minutes to allow the flavors to meld.

Cook the Shrimp: Heat a large non-stick skillet over medium-high heat. Once hot, add the marinated shrimp in a single layer, making sure not to overcrowd the pan. Cook for approximately 2-3 minutes on each side, or until the shrimp turn pink and opaque, indicating they are cooked through. Discard any remaining marinade from the bowl.

Prepare the Filling: While the shrimp cooks, prepare the filling by combining the diced avocado, halved cherry tomatoes, finely chopped red onion, and fresh cilantro in a separate bowl. Season with a pinch of salt and a squeeze of lime juice to enhance the flavor, gently mixing to combine.

Assemble the Wraps: Take a lettuce leaf and spoon in 2-3 cooked shrimp. Top with a generous serving of the avocado-tomato mixture. For an extra zing, drizzle with more lime juice or a dash of Sriracha sauce, if desired.

Serve: Arrange the filled lettuce wraps on a serving platter. Serve immediately while they are fresh and zesty. These wraps are perfect for sharing with friends or family as a light and delicious meal!
