Ingredients

For the Salad:

2 boneless, skinless chicken breasts

4 cups chopped romaine lettuce

1 cup cherry tomatoes, halved

1 cup corn kernels (fresh, frozen, or canned)

1/2 cup croutons (store-bought or homemade)

1/4 cup shaved Parmesan cheese

1 tablespoon olive oil

Salt and freshly ground black pepper, to taste

Fresh parsley, chopped (for garnish)

For the Caesar Dressing:

1/4 cup mayonnaise

1 tablespoon Dijon mustard

1 tablespoon Worcestershire sauce

1 tablespoon freshly squeezed lemon juice

1 small garlic clove, minced

1/4 cup finely grated Parmesan cheese

Salt and freshly ground black pepper, to taste

Instructions

Prepare the Chicken:

    - Begin by preheating your grill to medium-high heat.

      - Brush both sides of the chicken breasts with olive oil and season generously with salt and pepper.

        - Place the chicken on the grill and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C), ensuring it is cooked through. Once done, remove the chicken from the grill and allow it to rest for 5 minutes before slicing it into strips.

          Cook the Corn:

            - If using fresh corn, grill the corn on the cob for about 8-10 minutes, turning it occasionally until you get a nice char. After grilling, carefully cut the kernels off the cob.

              - For frozen corn, simply sauté it in a skillet over medium heat with a dash of olive oil until heated through.

                Make the Caesar Dressing:

                  - In a mixing bowl, combine the mayonnaise, Dijon mustard, Worcestershire sauce, lemon juice, minced garlic, and grated Parmesan cheese. Whisk these ingredients together until smooth and well blended. Taste and adjust seasoning with salt and freshly ground black pepper. If the dressing is too thick for your liking, thin it out with a splash of water.

                    Assemble the Salad:

                      - In a large serving bowl, combine the chopped romaine lettuce, halved cherry tomatoes, corn kernels, croutons, and the sliced grilled chicken. Drizzle a generous amount of Caesar dressing over the salad and toss gently until everything is well coated.

                        Serve:

                          - Divide the salad onto individual plates or serve family-style. For a beautiful finish, garnish each serving with additional shaved Parmesan cheese and a sprinkle of chopped parsley. Enjoy this vibrant salad while the chicken is still warm!
