Ingredients

1 pound boneless, skinless chicken thighs, cut into 1-inch cubes

2 ripe peaches, pitted and cut into wedges

2 tablespoons olive oil

2 tablespoons honey

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and freshly ground black pepper, to taste

Fresh basil leaves, for garnish

Wooden skewers (soaked in water for 30 minutes) or metal skewers

Instructions

Marinate the Chicken: In a medium mixing bowl, combine the olive oil, honey, smoked paprika, garlic powder, onion powder, salt, and black pepper. Add the cubed chicken thighs to the bowl, making sure they are evenly coated in the marinade. Cover the bowl with plastic wrap or a lid and let the chicken marinate in the refrigerator for at least 30 minutes. For a more intense flavor, allow it to marinate for up to 2 hours.

Prepare the Skewers: If using wooden skewers, ensure to soak them in water for about 30 minutes prior to grilling. This step is crucial as it prevents them from burning on the grill during cooking. If using metal skewers, you can skip this step.

Assemble the Skewers: Once the chicken has marinated, remove it from the refrigerator. Begin threading the chicken cubes and peach wedges onto the skewers, alternating between the two. Start and end with a piece of chicken to secure the structure of the skewer.

Preheat the Grill: Preheat your grill to medium-high heat, reaching a temperature between 400°F and 450°F. If using a charcoal grill, ensure the coals are glowing red and covered with white ash.

Grill the Skewers: Carefully place the assembled skewers on the hot grill. Grill for approximately 10-12 minutes, turning them occasionally to ensure even cooking. The chicken is done when it reaches an internal temperature of 165°F and has developed beautiful grill marks.

Serve: Once cooked, remove the skewers from the grill and let them rest for a few minutes on a plate. This resting period will help retain the juices in the chicken. Garnish the skewers with fresh basil leaves for an aromatic and flavorful touch. Serve warm and enjoy the sweet and savory combination!

              Prep Time: 40 minutes | Total Time: 1 hour | Servings: 4

Presentation Tips: Serve the skewers on a large platter with additional peach wedges and fresh basil scattered around for a colorful display. Drizzle a little bit of extra honey over the skewers right before serving to enhance the sweetness of the peaches.
