Grilled Chicken Quesadillas

2 cups cooked chicken breast, shredded

1 cup shredded cheese (your choice: cheddar, Monterey Jack, or a blend)

1/2 cup bell peppers, diced (any color)

1/2 cup red onion, thinly sliced

1/4 cup fresh cilantro, chopped

1 teaspoon garlic powder

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 tablespoon olive oil

Salt and pepper to taste

4 large flour tortillas

Salsa and sour cream, for serving

Prep the Chicken: In a large mixing bowl, add the shredded chicken. Sprinkle in the garlic powder, smoked paprika, ground cumin, and season with salt and pepper. Use a fork or spatula to mix thoroughly until the chicken is coated evenly with the spices.

    Cook the Vegetables: Heat olive oil in a skillet over medium heat. Once the oil is hot, add the diced bell peppers and thinly sliced red onion. Sauté the vegetables for about 5-7 minutes, stirring occasionally, until they become soft and begin to caramelize. Add the prepped chicken to the skillet and stir to combine. Cook for an additional 2-3 minutes, ensuring the chicken is warmed through. Remove from heat and fold in the chopped cilantro for added freshness.

      Assemble the Quesadillas: Lay a tortilla flat on a clean surface. Spoon one quarter of the chicken and vegetable mixture onto one half of the tortilla, then sprinkle a quarter of the shredded cheese on top. Carefully fold the tortilla in half, sealing in the filling. Repeat this process with the remaining tortillas.

        Grill the Quesadillas: Preheat a grill pan or a non-stick skillet over medium-high heat. Lightly spray or brush the surface with oil to prevent sticking. Place one folded quesadilla onto the grill or skillet. Grill for about 3-4 minutes on each side, or until the tortilla is golden brown and crispy, and the cheese is melted and gooey. Once done, remove from the pan and allow to cool for a minute before slicing into wedges.
