2 cups fresh corn kernels (approximately 4 ears of corn)

1/2 medium red onion, finely diced

1 medium red bell pepper, diced

1 jalapeño pepper, seeds removed and minced

1 cup cherry tomatoes, halved

1/4 cup fresh cilantro, finely chopped

Juice of 2 ripe limes

1 teaspoon smoked paprika

Salt and freshly ground black pepper, to taste

12 small tortilla cups (store-bought or homemade)

Optional: avocado slices for a creamy garnish

Grill the Corn: Begin by preheating your grill to medium heat. Husk the corn and rinse under cold water. Place the whole ears of corn directly on the grill grates. Grill for approximately 10-15 minutes, turning every few minutes to ensure even charring. The kernels should become charred and tender. Once grilled, remove the corn from the grill and allow it to cool slightly. Carefully cut the kernels off the cob into a mixing bowl.

    Prepare the Salsa: In a large mixing bowl, combine the grilled corn kernels, finely diced red onion, diced red bell pepper, minced jalapeño, halved cherry tomatoes, and chopped cilantro. Stir until all ingredients are evenly distributed.
