Ingredients

For the Chicken Marinade:

1 lb (450 g) boneless, skinless chicken thighs

1/4 cup (60 ml) soy sauce

2 tablespoons brown sugar

2 tablespoons sesame oil

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 tablespoon rice vinegar

1 teaspoon cornstarch (optional, for thickening)

For the Grilled Pineapple:

1 fresh pineapple, peeled and cut into rings

1 tablespoon brown sugar

1 teaspoon cinnamon (optional)

For the Teriyaki Sauce:

1/2 cup (120 ml) low-sodium soy sauce

1/4 cup (60 ml) water

1/4 cup (50 g) brown sugar

1 teaspoon cornstarch mixed with 1 tablespoon water (slurry for thickening)

1 teaspoon sesame oil

1 teaspoon minced garlic

1 teaspoon grated ginger

For Serving:

2 cups (cooked) jasmine or brown rice

1 cup steamed broccoli (or your choice of vegetable)

2 green onions, sliced (for garnish)

Sesame seeds (for garnish)

Instructions

Marinate the Chicken:

    - In a large bowl, whisk together the soy sauce, brown sugar, sesame oil, minced garlic, grated ginger, rice vinegar, and cornstarch (if using). Add the chicken thighs to the marinade, ensuring they are thoroughly coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, ideally 1-2 hours to enhance the flavors.

      Prepare the Teriyaki Sauce:

        - In a medium saucepan over medium heat, combine the low-sodium soy sauce, water, brown sugar, minced garlic, grated ginger, and sesame oil. Stir well and bring the mixture to a gentle simmer. Once simmering, add the cornstarch slurry, stirring constantly until the sauce thickens (approximately 2-3 minutes). Remove from heat and set aside.

          Grill the Pineapple:

            - Preheat your grill or grill pan to medium-high heat. Sprinkle the brown sugar and cinnamon (if using) over the pineapple rings, allowing them to soak in the flavors. Place the pineapple on the grill and cook for about 3-4 minutes per side, or until caramelized and grill marks visibly appear. Once done, remove from the heat and set aside.

              Grill the Chicken:

                - Preheat the grill again to medium-high heat if needed. Take the marinated chicken thighs out of the marinade, letting any excess drip off. Grill the chicken for around 6-7 minutes per side, or until fully cooked (internal temperature should reach 165°F or 74°C). In the last few minutes of grilling, brush the chicken with the prepared teriyaki sauce for added flavor.

                  Assemble the Bowls:

                    - In serving bowls, add a generous scoop of cooked rice as the base. Layer sliced grilled chicken, grilled pineapple rings, and steamed broccoli on top. Drizzle additional teriyaki sauce over each bowl and finish by garnishing with sliced green onions and sesame seeds for an extra touch.

                      Serve and Enjoy:

                        - Serve the grilled pineapple chicken teriyaki bowls warm, ensuring each bowl showcases a delightful balance of sweet pineapple, savory chicken, and rich teriyaki sauce.
