Grilled Sweet Corn & Avocado Salad

4 ears of fresh sweet corn

2 ripe avocados, diced

1 red bell pepper, diced

1/2 small red onion, finely chopped

1 cup cherry tomatoes, halved

1 cup black beans, drained and rinsed

1/4 cup fresh cilantro, chopped

Juice of 2 limes

3 tablespoons olive oil

Salt and black pepper to taste

1 teaspoon chili powder (optional)

Crumbled queso fresco or feta cheese for garnish (optional)

Instructions
 

Prepare the Corn: Preheat your grill to medium-high heat. Carefully husk the sweet corn, making sure to remove all the silk strands. Place the corn directly on the grill and cook for about 10-15 minutes. Turn the ears occasionally to achieve even charring until the kernels are tender and slightly charred. Once cooked, remove the corn from the grill and let it cool for a few minutes. Using a sharp knife, slice the kernels off the cob, taking care to capture as much of the sweet corn as possible.

    Combine the Ingredients: In a large mixing bowl, combine the grilled corn kernels, diced avocados, diced red bell pepper, finely chopped red onion, halved cherry tomatoes, black beans, and chopped cilantro. Use a gentle motion to toss the ingredients together, being careful not to mash the avocados.

      Make the Dressing: In a small bowl, whisk together the freshly squeezed lime juice, olive oil, salt, black pepper, and optional chili powder. Taste the dressing and adjust the seasoning according to your preference.
