Ingredients

1 pound fresh salmon fillet, skin removed and cut into 1-inch cubes

1/2 cup soy sauce

1/4 cup brown sugar

2 tablespoons honey

2 tablespoons rice vinegar

1 tablespoon minced garlic (about 3 garlic cloves)

1 tablespoon minced ginger (about a 1-inch piece)

1 teaspoon sesame oil

1 tablespoon cornstarch

1 tablespoon water

1 bell pepper (red or yellow), cut into 1-inch pieces

1 cup pineapple chunks (fresh or canned, drained)

2 green onions, sliced (for garnish)

Sesame seeds (for garnish)

Skewers (if using wooden skewers, soak them in water for at least 30 minutes before grilling)

Instructions

Prepare the Marinade: In a medium mixing bowl, combine the soy sauce, brown sugar, honey, rice vinegar, minced garlic, minced ginger, and sesame oil. Whisk until the sugar has fully dissolved. Set aside 1/4 cup of this marinade in a separate bowl; this will be used for basting during grilling.

Marinate the Salmon: Place the salmon cubes in the bowl with the remaining marinade. Gently toss to ensure all pieces are coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, allowing the salmon to absorb the flavors (up to 1 hour for a stronger taste).

Thicken the Marinade (Optional): In a small saucepan, mix the reserved marinade with cornstarch and water. Heat over medium, stirring continuously until the mixture begins to simmer and thickens to a glaze-like consistency. Remove from heat and set aside.

Assemble the Skewers: Preheat your grill to medium-high heat. Alternatively thread the marinated salmon cubes, bell pepper pieces, and pineapple chunks onto the soaked skewers, alternating between the three for a colorful presentation.

Grill the Skewers: Carefully place the skewers on the preheated grill. Cook for approximately 4-5 minutes on each side. Brush the skewers with the thickened marinade while grilling, turning them occasionally to ensure even cooking and to achieve beautiful grill marks. Monitor closely to prevent burning.

Garnish and Serve: Once cooked through—indicated by the salmon becoming opaque and flaking easily—remove the skewers from the grill. Garnish with sliced green onions and a sprinkle of sesame seeds. Serve immediately, with the leftover marinade on the side for dipping, if desired.
