Ingredients

1 cup natural almond flour

1/2 cup natural peanut butter (unsweetened)

1/4 cup maple syrup or agave nectar

1/4 cup unsweetened cocoa powder

1/2 teaspoon vanilla extract

1/4 teaspoon sea salt

1/4 cup dark chocolate chips (dairy-free if preferred)

Optional Topping: crushed nuts or a sprinkle of sea salt

Instructions

Prepare the Peanut Butter Mixture: In a medium-sized mixing bowl, combine the natural peanut butter, maple syrup (or agave nectar), vanilla extract, and sea salt. Use a whisk or a spoon to mix thoroughly until the mixture is smooth and creamy, ensuring all ingredients are well combined.

Make the Chocolate Base: In a separate bowl, blend the almond flour and cocoa powder until well mixed. Gradually incorporate 2 to 3 tablespoons of melted dark chocolate chips into the dry mix, stirring until the mixture reaches a dough-like consistency. If the mixture appears too dry, add a small amount of melted chocolate until it achieves the desired texture.

Line the Muffin Tins: Prepare a standard muffin tin by lining it with cupcake liners. This will facilitate the removal of the peanut butter cups once they are set.

Layer the Chocolate Base: Take a spoonful of the chocolate mixture and press it firmly into the bottom of each cupcake liner, creating an even layer across all cups. Use your fingers or the back of a small spoon to ensure that the base is uniformly distributed.

Add the Peanut Butter Layer: Carefully spoon the prepared peanut butter mixture over each chocolate base, filling the liners until they are about three-quarters full. Use the back of the spoon to smooth and flatten the tops of the peanut butter layer for an even appearance.

Top with Chocolate: In a microwave-safe bowl, melt the remaining dark chocolate chips. Once melted, drizzle or spoon the chocolate over the peanut butter layers, ensuring that they are completely covered.

Chill: Place the muffin tin in the freezer for approximately 30 minutes, or until the peanut butter cups are fully set and firm to the touch.

Serve: Once set, gently peel off the cupcake liners to reveal the cups. For an extra touch, sprinkle with crushed nuts or a hint of sea salt before enjoying your delicious, guilt-free peanut butter cups!
