Hearty Pumpkin & Lentil Stew

3 cloves garlic, minced

1 carrot, diced

1 celery stalk, diced

1 medium pumpkin (approximately 2-3 lbs), peeled and cubed

1 cup dried green or brown lentils, rinsed

4 cups vegetable broth

1 can (14 oz) diced tomatoes in juice

1 tsp ground cumin

1 tsp ground coriander

½ tsp smoked paprika

½ tsp dried thyme

½ tsp salt (adjust to taste)

¼ tsp black pepper (adjust to taste)

2 cups kale or spinach, roughly chopped

2 tbsp olive oil

Fresh parsley, chopped (for garnish)

Optional: a squeeze of lemon juice for added brightness
