2 ½ cups all-purpose flour

½ cup granulated sugar

2 teaspoons cocoa powder

1 large egg

½ cup buttermilk, at room temperature

⅓ cup vegetable oil

2 tablespoons red food coloring (gel or liquid)

1 teaspoon vanilla extract

For the Filling:

½ cup brown sugar, packed

2 tablespoons ground cinnamon

¼ cup unsalted butter, softened

1 cup chopped pecans (optional)

For the Cream Cheese Frosting:

4 ounces cream cheese, softened

¼ cup unsalted butter, softened

1 teaspoon vanilla extract

2 cups powdered sugar

2-4 tablespoons milk (to desired consistency)

Instructions
 

Prepare the Dough:

    - In a large mixing bowl, combine 2 ½ cups of flour, ½ cup of granulated sugar, 2 teaspoons of cocoa powder, 1 teaspoon of baking soda, and 1 teaspoon of salt. Whisk the ingredients together until they are fully incorporated.

      - In a separate bowl, whisk together 1 large egg, ½ cup of buttermilk, ⅓ cup of vegetable oil, 2 tablespoons of red food coloring, and 1 teaspoon of vanilla extract until the mixture is smooth.

        - Gradually pour the wet ingredients into the dry mixture, stirring until a soft dough begins to form. If the dough feels too sticky, add additional flour, a tablespoon at a time, until manageable.

          Knead the Dough:

            - Turn the dough out onto a floured surface. Knead for about 5 minutes, or until the dough becomes smooth and elastic.

              - Transfer the kneaded dough to a greased bowl. Cover it with a clean kitchen towel or plastic wrap and place it in a warm area to rise. Let it sit for about 1 hour, or until it has doubled in size.

                Make the Filling:

                  - In a small bowl, mix together ½ cup of packed brown sugar and 2 tablespoons of ground cinnamon to create the filling. Set this mixture aside.

                    - Once the dough has risen, roll it out on a lightly floured surface into a rectangle approximately ¼ inch thick. Spread the softened butter evenly over the surface, leaving a small border around the edges.

                      Assemble the Rolls:

                        - Evenly sprinkle the cinnamon-sugar mixture over the buttered dough, then add the optional chopped pecans if you choose.

                          - Starting from one of the long edges, carefully roll the dough into a tight log. Pinch the seams together to seal.

                            - Using a sharp knife or dental floss, slice the log into 12 equal portions. Place these slices in a greased baking dish, ensuring there is some space between each roll for expansion.

                              Second Rise:

                                - Cover the rolls with a towel and allow them to rise again for about 30 minutes, or until they have puffed up.

                                  Bake:

                                    - Preheat your oven to 350°F (175°C). Once preheated, place the rolls in the oven and bake for 20-25 minutes, or until they are fully cooked and slightly golden.

                                      Prepare Frosting:

                                        - While the rolls are baking, prepare the cream cheese frosting. In a medium bowl, beat together 4 ounces of softened cream cheese, ¼ cup of softened butter, 1 teaspoon of vanilla extract, and 2 cups of powdered sugar until smooth. Gradually add the milk, one tablespoon at a time, until you reach your desired frosting consistency.
